Job Description:
We are looking for an experienced second in command in our
kitchen, thriving in a fun, fast-paced environment that focuses on
developing talent and serving great food.
- Assist the chef in all food service operations and day-to-day
kitchen operations.
- Provide direction to kitchen staff, ensuring execution of all
employee duties.
- Monitor kitchen operations to ensure compliance with health and
fire department regulations.
- Ensure compliance with state, federal, and local food handling
requirements and standards.
- Assist in implementing and managing kitchen and restaurant
policies and procedures throughout the scheduled shift.
- Complete duties of a line cook when needed, capable of
performing duties of all kitchen positions.
- Ensure products are stored at correct temperatures, recipe
books are up to date with current menu items, portions, and
ingredients.
- Ensure daily prep sheets and meat/fish yield sheets are
utilized daily, with accurate product counts recorded.
- Participate in monthly inventory process.
- Anticipate, identify, and correct issues with inventory,
systems, and staffing.
- Monitor labor costs to attain budgeted goals within restaurant
policies and procedures.
- Oversee and approve training and development of kitchen
staff.
- Participate in hiring process by conducting interviews and
making hiring recommendations.
- Assist in completing 30-day training and annual reviews for
heart-of-house employees.
